I know the title says it, but I have to say it again. I make a DAAANG! good Quesadilla.
Quesadillas are one of those items that I reserve for when I’m in a hurry or neither my wife nor I planned on anything for dinner at it’s already 7 at night and we look at each other and say, “Quesadillas.” Luckily for me and my family, I make a DAAANG! good Quesidilla. Did I say that already.
Here’s what I do. I slather up a flour tortilla with butter on one side and place it on a hot skillet. I grate up some chedder cheese and some pepper jack cheese and put a layer of each on the tortilla.
Here is what makes my Quesadillas so great. As I have mentioned in previous posts, when I cook, I use a lot of vegetable and I always cook more than I need for that dish. Before I combine the ingredients, I pull some of the vegetables out. Last week I cooked up my spaghetti dish and had some left over vegetables so I added that to my Quesadilla this time. YES!
I slather another tortilla with butter and place it on top. I let it cook for another minute or two and turn it over and let that cook for 3 or 4 minutes until the tortilla is golden brown.
Since I consider this a quick meal, I found the quickest way to cut a quesadilla is with a pizza cutter. Once it’s cut I can dress each slice up individually. Tonight I wanted quick so I added a layer of sour cream, my favorite roasted red chilli salsa, and some Tapatillo Hot Sauce. Other items, I will frequently top it off with beans, avacado or guacamole, rice, or whatever I happen to have. It’s quick. It’s easy. But most importantly, I make a DAAANG! good Quesadilla.
